Everytime starting the pi, the volume sits on zero output. Is there a way to start it with 100% ?

Using Alsa? /var/lib/alsa/asound.state all settings stored there.
You can use also alsamixer on the command line, if messed up sudo /etc/init.d/alsa-utils reset
